Equipment

  • Oven

Ingredients

Vegetable Medley

  • 2 celery stalks diced
  • 1 medium yellow onion quartered
  • 2 sprigs fresh thyme finely minced

Turkey Thighs

  • 2-3 pounds bone-in turkey thighs
  • salt and freshly ground black pepper to taste

Herb-Infused Butter

  • 4 ounces unsalted butter softened
  • 1 teaspoon lemon zest
  • 2 teaspoons minced garlic
  • 3 sprigs fresh rosemary leaves removed and finely chopped
  • 1 teaspoon smoked paprika
  • 5 fresh sage leaves finely chopped
  • 1 tablespoon fresh parsley chopped
  • ½ teaspoon crushed red pepper flakes

Instructions

Step 1: Prep the Oven and Pan

  • The first thing you want to do is preheat your oven to 375°F (190°C). Meanwhile, grab a roasting pan. If you have a wire rack, it's a great addition and helps the turkey cook evenly.

Step 2: Prepare the Vegetables

  • In a separate bowl, combine the diced celery and quartered onion. Lay them in the bottom of the roasting pan. These vegetables will infuse moisture and flavor into the turkey as it roasts.

Step 3: Make the Herb-Infused Butter

  • In another bowl, mix together the softened butter, lemon zest, minced garlic, rosemary, smoked paprika, sage, parsley, and red pepper flakes. Use a fork to combine everything evenly. The result should be a vibrant green butter that smells heavenly.

Step 4: Season the Turkey

  • Rinse the turkey thighs under cold water and pat them dry with paper towels. This step is crucial for getting that crispy skin we crave. Generously sprinkle salt and freshly ground black pepper all over the thighs. Don’t be shy; seasoning is key!

Step 5: Slather on the Butter

  • Now, it’s time for the star treatment. Using your hands (or a brush if you prefer), slather the herb-infused butter over the top and underneath the skin of the turkey thighs. This will ensure that every bite is packed with flavor.

Step 6: Roast the Turkey

  • Place the turkey thighs in your roasting pan, skin-side up, and pop them into the preheated oven. Let them roast for about 45 minutes to 1 hour, or until the internal temperature reaches 165°F (74°C).
  • Don’t forget to baste the thighs with the melted herb butter every 20 minutes. This will keep the meat juicy and full of flavor.

Step 7: Let Them Rest

  • Once the turkey thighs are cooked, remove them from the oven and let them rest for 10-15 minutes. This is the hardest part, but trust me; it allows the juices to redistribute throughout the meat.

Notes

  1. Choose Good Quality Meat: Look for organic, free-range turkey thighs if possible. The flavor difference is noticeable.
  2. Experiment with Herbs: Feel free to swap out herbs based on what you have on hand. Thyme, tarragon, or even dill can create unique flavors.
  3. Don't Skimp on Salt: Chicken and turkey particularly benefit from proper seasoning, so don't hold back.
  4. Use a Meat Thermometer: This tool will take all the guesswork out of determining doneness.
  5. Save the Drippings: After cooking, use the drippings from the pan to make a quick gravy—the ultimate complement to turkey.
