Equipment

  • Skillet
  • Cup

Ingredients

  • 6 toasted brioche buns
  • 1 cup shredded sharp cheddar cheese
  • 1 ½ pounds lean ground beef 85% lean, 15% fat
  • 1 medium yellow onion finely chopped
  • 1 teaspoon smoked paprika
  • 14.5 oz can diced tomatoes drained
  • ½ cup smoky barbecue sauce
  • 1 cup beef stock
  • ½ cup ketchup
  • 1 tablespoon Worcestershire sauce

Instructions

Step 1: Sauté the Onions

  • Begin by heating a skillet over medium heat. Add a drizzle of oil and toss in the finely chopped onions. Sauté them until they’re translucent, about 5 minutes. The aroma will fill your kitchen and make your mouth water.

Step 2: Brown the Beef

  • Next, add the ground beef to the skillet. Break it up with a spatula while it browns. Ensure there’s no pink left and cook until it’s nicely browned. This step seals in the flavors.

Step 3: Spice it Up

  • Now, sprinkle in the smoked paprika. This adds a subtle depth to your mixture. Give it a good stir to mix the beef and onion well. Trust me, the savory smell at this stage is heavenly.

Step 4: Add the Tomatoes

  • Go ahead and add the drained diced tomatoes. These not only add flavor but also moisture. Stir them in, letting them break up a bit as you mix.

Step 5: The Saucy Part

  • Pour in the barbecue sauce, beef stock, ketchup, and Worcestershire sauce. Stir everything together until it’s well combined. Let this simmer for about 10 minutes. This is where the magic starts to happen. Watch the sauce become thick and luscious.

Step 6: Toast Those Buns

  • While the beef mixture is simmering, lightly toast your brioche buns. A little crunch will help to hold the sloppy filling without making a mess.

Step 7: Assemble the Sloppy Joes

  • Now, time to assemble! Spoon a generous amount of the beef mixture onto the bottom half of each bun. Top it with shredded cheddar cheese. Place the top bun over it, and voila—you’re ready to dig in!

Notes

Leftover Beef: You can use leftover roast beef or ground turkey as a substitute for the ground beef.
Spice Levels: If you love heat, add some chili powder or jalapeños to the beef mixture.
Cheese Choices: Experiment with different types of cheese for a unique twist. Pepper jack could be interesting!
Make-Ahead: You can prepare the beef mixture a day in advance. Just reheat it before serving.
Freezing: The sloppy joe filling freezes well. Make a big batch and save some for later!
