Equipment

  • Skillet

Ingredients

  • 12 ounces center-cut bacon sliced into strips
  • 8 ounces cremini mushrooms quartered
  • 1/2 medium yellow onion diced
  • 1 bulb roasted garlic cloves separated
  • 2 skinless boneless chicken breasts
  • 1 pound farfalle pasta bow tie, cooked and drained
  • 1/3 cup roughly chopped sun-dried tomatoes
  • 2 tablespoons extra virgin olive oil
  • 3/4 cup dry white wine
  • 1 cup heavy whipping cream
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon coarse kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

Step 1: Cook the Bacon

  • Begin by heating a large skillet over medium heat. Add the sliced bacon to the skillet. Cook until crispy, which should take about 5-7 minutes. Once done, use a slotted spoon to remove the bacon. Set it aside, but leave the delicious bacon drippings in the pan.

Step 2: Sauté the Vegetables

  • In the same skillet, add the diced onion and quartered mushrooms. Sauté until they soften, about 4-5 minutes. The flavors from the bacon will infuse into the vegetables, enhancing their taste.

Step 3: Prepare the Garlic

  • While the veggies are cooking, spread the roasted garlic cloves across a small bowl. With a fork, mash them until they form a paste. This will create a fragrant base for your sauce.

Step 4: Add Chicken to the Skillet

  • Now, it’s time to add the chicken breasts. Season them with salt and pepper, then place them in the skillet. Cook each side for about 6-7 minutes or until they’re nicely browned and cooked through. Remove them and set aside to slice later.

Step 5: Make the Sauce

  • In the same pan, pour in the dry white wine. Use a wooden spoon to scrape up any bits stuck to the bottom. Allow it to simmer for about 2-3 minutes. Next, add the mashed garlic and heavy whipping cream, stirring gently to combine. Cook the mixture for a few minutes until it begins to thicken slightly.

Step 6: Mix Everything Together

  • Slice the cooked chicken and return it to the skillet. Add the sun-dried tomatoes, cooked farfalle pasta, thyme, grated Parmesan, and crispy bacon. Toss everything together so the pasta is well-coated in the sauce, and flavors meld beautifully for another 2-3 minutes.

Step 7: Serve and Enjoy

  • Finally, serve the pasta in bowls, garnishing with extra Parmesan and cracked pepper if desired. Enjoy this blissful creation with a cool beverage. Your friends and family will be amazed at your culinary skills.

Notes

  • Use Fresh Ingredients: Fresh herbs and produce will elevate the flavors. If possible, use freshly diced tomatoes instead of canned for extra juiciness.
  • Adjust the Creaminess: If you prefer a lighter version, feel free to replace half of the heavy cream with chicken broth.
  • Roast Garlic at Home: If you have time, roasting garlic at home is simple. Just drizzle cloves with olive oil and bake until golden.
  • Leftover Chicken?: Rotisserie chicken works perfectly for a quicker alternative. Just shred it and toss it in during the sauce stage.
  • Pairing Options: Consider a side salad with a light vinaigrette to balance the richness of the dish.
