  • 90 g ¾ cup all-purpose flour
  • 3 tablespoons cornstarch cornflour
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder adds depth compared to garlic salt
  • 2 teaspoons smoked paprika for a richer, smoky flavor
  • 3 skinless chicken breast fillets cut into bite-sized pieces

For the Sauce:

  • 1 tablespoon vegetable oil
  • 1 large onion peeled and cut into large chunks
  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 2 cloves garlic peeled and minced
  • 1 teaspoon freshly minced ginger
  • 150 ml ⅔ cup tomato ketchup
  • 2 tablespoons malt vinegar
  • 6 tablespoons dark brown muscovado sugar
  • 475 g 17 oz canned pineapple chunks in juice (drained and juices reserved)

To Serve:

  • Egg fried rice or steamed white rice
  • 1 teaspoon sesame seeds optional, for extra crunch and flavor

Instructions
 

Step 1: Prepare the Chicken

  • Start by marinating the chicken pieces. In a bowl, combine the beaten eggs, flour, cornstarch, salt, pepper, garlic powder, and smoked paprika. Mix well until fully combined. Add the chicken pieces and stir until each piece is coated in the mixture.

Step 2: Fry the Chicken

  • Heat oil in a large pan over medium-high heat. Once hot, carefully add the chicken pieces. Fry until golden brown and crispy, about 4-5 minutes per side. Work in batches if necessary to avoid overcrowding. Remove and let drain on paper towels.

Step 3: Make the Sauce

  • In the same pan, reduce heat to medium and add a tablespoon of oil. Sauté the onion, red, and green bell peppers until softened, about 5 minutes. Add garlic and ginger, sauté for another minute or until fragrant.

Step 4: Add the Sauce Ingredients

  • Pour in the ketchup, malt vinegar, brown sugar, and reserved pineapple juice. Stir to combine and bring to a gentle simmer.
  • Step 5: Combine Chicken and Sauce
  • Once the sauce starts to bubble, add the fried chicken and pineapple chunks to the pan. Toss everything together well so that the chicken gets coated in the sauce. Cook for an additional 2-3 minutes to heat through.

Step 6: Serve and Garnish

  • Serve the sweet and sour chicken over a bed of rice. Top with sesame seeds if desired for an added crunch.
