Equipment

  • Oven
  • Baking Dish

Ingredients

  • 1 32-ounce package extra-crispy frozen potato tots
  • 2 tablespoons light canola oil
  • 1 medium sweet yellow onion
  • 1 1/2 pounds lean 90/10 ground beef
  • 1 teaspoon ground cumin:
  • 1 teaspoon roasted garlic powder.
  • 1/2 teaspoon kosher salt:
  • 1 1-ounce packet smoky taco seasoning blend:
  • 2 15-ounce cans pinto beans, drained and rinsed.
  • 2 10-ounce cans fire-roasted diced tomatoes with green chiles
  • 1 cup sweet frozen corn kernels 1/2 cup creamy sour cream
  • 1 8-ounce package shredded Mexican-blend cheese

Instructions

Step 1: Preheat and Prepare

  • Start by preheating your oven to 375°F (190°C) and greasing a 9x13-inch baking dish with nonstick cooking spray. This prevents stick-y situations later on.

Step 2: Sauté the Onions

  • In a large skillet, heat the canola oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 5 minutes until it becomes translucent and fragrant. You’re building flavor here, so don’t rush this step.

Step 3: Brown the Beef

  • Add in the ground beef to your skillet. Break it apart with a spoon and cook until it's browned, about 7 minutes. Make sure to drain any excess fat for a healthier option.

Step 4: Spice It Up

  • Sprinkle in the cumin, roasted garlic powder, and kosher salt. Then, add the smoky taco seasoning. Stir everything well, allowing the spices to coat the meat and onions evenly. This will take the flavor to new heights.

Step 5: Mix in Beans and Tomatoes

  • Add in the drained pinto beans, fire-roasted tomatoes, and frozen corn. Stir well to combine. Allow this mixture to simmer for about 5 minutes to meld the flavors.

Step 6: Create Layers

  • Pour half of the meat mixture into your prepared baking dish. Spread it evenly. Next, dollop half of the sour cream over the beef and layer it with half the shredded cheese.

Step 7: Assemble the Casserole

  • Repeat the layering by adding the remaining beef mixture, more sour cream, and finishing with a final layer of cheese. Top it all off with the frozen potato tots, placing them evenly over the entire surface.

Step 8: Bake

  • Slide the casserole into the preheated oven and bake for 30 to 35 minutes. You want the potato tots to be golden and crispy while the cheese is bubbling. This is the moment!

Step 9: Garnish and Serve

  • Once out of the oven, garnish with chopped cilantro if desired. Serve hot and watch everyone come back for seconds.

Notes

  • Choose Lean Meat: Opting for leaner meat cuts can enhance the dish without sacrificing flavor.
  • Vegetarian Twist: Replace the beef with lentils or black beans for a vegetarian-friendly version.
  • Spice It Up: If you like heat, consider adding some diced jalapeños or a dash of hot sauce.
  • Cheese Variations: Don’t hesitate to mix and match cheeses. Pepper jack or sharp cheddar can add different flavor profiles.
  • Make-Ahead Magic: Prepare this dish a day in advance. Just bake right before serving for an easy weeknight dinner.
