  • - 12 oz boneless skinless chicken breasts
  • - 2 Tbsp olive oil divided
  • - 3/4 cup BBQ sauce divided
  • - 4 slices bacon cooked and chopped
  • - 1 cup fresh pineapple cut into small cubes
  • - 1/3 medium red onion sliced thin and rinsed to soften the bite
  • - 1/4 cup fresh cilantro chopped or torn
  • - 1 Tbsp fresh lime juice adds a pop of brightness
  • - 1 clove garlic minced
  • - Freshly ground black pepper to taste
  • - 1 cup shredded pepper jack cheese optional; adds a spicy kick

Step 1: Preheat Your Oven and Grill

  • Begin by preheating your oven to 475°F. If you're using a grill, make sure to preheat it to medium-high. This ensures that everything cooks evenly and gets that lovely char.

Step 2: Prepare the Chicken

  • Lightly brush both sides of the chicken breasts with 1 tablespoon of olive oil, then sprinkle some salt and pepper. This small step brings out the flavors beautifully. Grill the chicken for about 5-7 minutes per side, rotating once halfway through. Brush 3 tablespoons of BBQ sauce on the chicken during the last minute or two of cooking. Once done, take it off the grill and let it cool for about 5 minutes before chopping into bite-sized pieces.

Step 3: Roll Out the Dough

  • While the chicken is cooling, spread out your pizza dough. Use a floured sheet of parchment paper to roll it into a 12-inch round on a pizza tray. This will make transferring it to the oven a breeze.

Step 4: Whisk the Olive Oil and Garlic

  • In a mixing bowl, whisk together the remaining tablespoon of olive oil and the minced garlic. Brush this mixture over the surface of the dough. Let it rest for about 10 minutes; this allows the dough to relax and makes it easier to bake.

Step 5: Assemble the Pizza

  • Cut the grilled chicken into small cubes. Brush the dough with the remaining BBQ sauce (combine ½ cup + 1 tablespoon). Start layering the toppings: sprinkle 1/3 of the mozzarella cheese, followed by the chicken, pineapple chunks, crispy bacon, and red onions. Finish off with the remaining mozzarella and season with freshly ground black pepper.

Step 6: Bake the Pizza

  • Slide the assembled pizza into your preheated oven (or onto your hot grill) and bake until the crust turns golden brown, about 11-13 minutes. Just keep an eye on it—every oven is a little different!

Step 7: Serve

  • Once out of the oven, let it sit for a moment. Slice up your pizza and sprinkle the fresh cilantro on top before serving it warm.
