Equipment

  • Medium saucepan
  • slotted spoon
  • Parchment paper
  • sharp knife or mandoline

Ingredients

  • - 2 Meyer lemons or regular lemons, thoroughly washed
  • - 1 cup granulated sugar
  • - 1 cup water
  • - 1 tsp vanilla extract to add a hint of warmth
  • - Optional: A pinch of sea salt to enhance the lemon flavor

Instructions

Step 1: Prepare the Lemons

  • Begin by washing your lemons thoroughly to get rid of any waxy coating or debris, especially if they aren’t organic. This ensures you’re working with pure fruit for your candy. Once washed, slice the lemons thinly—aim for about an eighth of an inch thick. A sharp knife or a mandoline works wonders here. Set those lovely rounds aside; they will soon transform into candy.

Step 2: Make the Syrup

  • In a medium saucepan, combine one cup of water with one cup of granulated sugar. Place the saucepan over medium heat and stir occasionally. You want to bring this mixture to a full boil. Watch closely—this should only take about 2 to 3 minutes. Keep stirring until the sugar is completely dissolved. It’s like a magic potion right before your eyes!

Step 3: Simmer the Lemon Slices

  • Now that your syrup is bubbling, carefully add the lemon slices into the simmering mixture. Lower the heat to maintain a gentle simmer. Let those slices cook for about 30 to 40 minutes. You’ll know they’re done when they look soft and glossy. A gentle stir might be tempting, but resist it; too much stirring can break the lovely slices apart.

Step 4: Cool and Dry

  • Once the lemon slices are perfectly cooked, it’s time to remove them from the syrup. Use a slotted spoon or tongs to carefully take them out, letting any excess syrup drip off. Place the slices in a single layer on a sheet of parchment paper. Allow them to cool at room temperature. For the best texture, let them dry overnight if possible. Patience is key here for that perfect final product!

Notes

- Use Fresh Lemons: The freshness of your lemons can really enhance the overall flavor of the candy.
- Slice Evenly: Try to slice the lemons uniformly to ensure even cooking. If you have a mandoline, now is the time to use it!
- Don’t Rush the Drying: Proper drying helps achieve the right texture. Rushing this step might result in a too-sticky candy.
- Experiment with Flavors: Feel free to add other flavors, such as a hint of mint or ginger, to make the candy uniquely yours.
- Perfect Your Timing: Keep a close eye on the cooking time; overcooked lemons can become mushy.
