Chicken Fajita Pitas

  • 6 pita pockets 8-inch, cut in half
  • 1 ½ pounds skinless boneless chicken breasts
  • 1 large onion cut into wedges
  • 3 medium bell peppers red, yellow, or green, sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey

Step 1: Prepare the Fajita Spice Mix

  • Combine all the spices in a small bowl. Mix well. This spice blend serves as the backbone of flavor for your chicken.

Step 2: Marinate the Chicken

  • In a large bowl, place the chicken breasts. Drizzle with olive oil, lime juice, honey, and the prepared spice mix. Make sure each piece is well coated. Cover and let marinate for at least 15 minutes. A little waiting does wonders!
