Equipment

  • Mixing bowl

Ingredients

Potatoes:

  • High-quality vegetable oil for deep frying
  • Sea salt
  • 2 large russet potatoes

Batter:

  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cayenne pepper
  • 2 teaspoons smoked paprika
  • Freshly cracked black pepper
  • 1/2 teaspoon onion powder
  • Pinch of kosher salt

Instructions

Step 1: Prepare the Potatoes

  • Start by peeling the russet potatoes. Rinse them well and slice them into thin spiral shapes using a spiralizer. If you don’t have one, you can cut them into thin strips. Rinse the cut potatoes in cold water to remove excess starch.

Step 2: Make the Batter

  • In a mixing bowl, combine the all-purpose flour, garlic powder, cayenne pepper, smoked paprika, black pepper, onion powder, and kosher salt. Mix thoroughly until evenly blended.

Step 3: Heat the Oil

  • In a deep frying pan or deep fryer, heat about three inches of vegetable oil to 350°F (175°C). Make sure the oil is hot enough to create a crispy exterior.

Step 4: Coat the Potatoes

  • Take the spiraled or cut potatoes and toss them in the batter mixture. Ensure each piece is well-coated. This step is crucial for that crispy texture we all crave!

Step 5: Fry the Potatoes

  • Carefully drop a batch of the coated potatoes into the hot oil. Fry them in small batches to avoid crowding. Allow them to cook for 3-4 minutes or until they turn golden brown.

Step 6: Drain and Season

  • Once cooked, use a slotted spoon to remove the fries from the oil. Place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with sea salt while they are hot to enhance the flavor.

Step 7: Serve and Enjoy!

  • Finally, serve your homemade curly fries alongside your favorite dipping sauces. Whether you choose ketchup, ranch, or cheese sauce, you’re in for a treat!

Notes

  • Stick to Russet Potatoes: For the perfect texture, always use russet potatoes. They have high starch content and create a fluffier interior.
  • Don’t Rush the Frying: Letting the oil reach the proper temperature is key. If it’s not hot enough, your fries could become greasy instead of crispy.
  • Watch the Batch Size: Fry in small batches. Overcrowding will drop the oil temperature, leading to soggy fries.
  • Get Creative with Seasoning: While the classic blend is delightful, feel free to experiment. Add cayenne for spice or Parmesan for a cheesy twist.
  • Serve Immediately: These curly fries taste best fresh and hot. They tend to lose their crunch if left uneaten for too long.
