Instructions
 

Step 1: Prepare the Potatoes

  • Start by peeling the Russet potatoes. Rinse them under cold water to remove any dirt. Once cleaned, cut them into large chunks—about 1 to 2 inches seems to do the trick.

Step 2: Soak the Potatoes

  • After cutting, soak the potato chunks in a bowl of cold water for at least 30 minutes. This step is crucial; it helps to remove excess starch, ensuring crispiness when frying. An anecdote from my kitchen: The first time I skipped this step, my potatoes turned out less crispy. Lesson learned!

Step 3: Heat the Oil

  • In a large pot or deep fryer, heat enough vegetable or canola oil to cover the potatoes. Aim for about 2 to 3 inches of oil. Use a thermometer to bring it to 350°F (175°C). This is an important temperature for achieving that golden crispiness.

Step 4: Fry the Potatoes

  • Once the oil is hot, gently add the soaked potato chunks. Do not overcrowd the pot. You may need to do this in batches. Fry them for about 5 to 6 minutes or until they’re golden brown.

Step 5: Drain and Season

  • Using a slotted spoon, transfer the fried potatoes onto a plate lined with paper towels. This helps absorb excess oil. While they’re still hot, sprinkle the sea salt and any optional seasonings. Give them a good toss to ensure even coverage.
