  • 1 cup all-purpose flour
  • 1 cup dry bread crumbs or panko breadcrumbs
  • 12 ounces jalapeño peppers seeded and sliced in half
  • 12 ounces cream cheese softened to room temperature
  • 1 8-ounce package of shredded sharp Cheddar cheese
  • 1 cup whole milk
  • 1 tablespoon bacon bits or crumbled cooked bacon
  • 2 quarts oil for frying or as needed
  • 1/2 teaspoon garlic powder for added depth of flavor
  • 1/2 teaspoon smoked paprika to add a hint of smokiness

Step 1: Prepare the Jalapeños

  • Start by preheating your oil in a deep pan or fryer to 375°F (190°C). While that’s heating up, grab those jalapeños. Cut them in half and carefully remove the seeds. If you’re feeling adventurous, leave a few seeds for an extra kick!

Step 2: Make the Filling

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, bacon bits (if using), garlic powder, and smoked paprika. Mix thoroughly until you have a consistent, creamy filling. As you stir, imagine all the flavors coming together in harmony.

Step 3: Fill the Jalapeños

  • Take a spoon and scoop the cheesy mixture into each jalapeño half. Don’t be shy! Fill them to the brim; nobody wants a half-hearted popper. Press gently to secure the filling.
