  • 4 large portobello mushrooms stems removed, rinsed, and patted dry

  • 1 tablespoon of olive oil
  • 1 teaspoon of kosher salt
  • 1 large red onion cut into thick slices
  • 2 cups of mixed greens arugula, spinach, romaine, etc.
  • 1 small avocado sliced
  • 4 sweet onion burger buns

  • ½ cup of classic ketchup
  • ½ cup of garlic-infused hummus

Step 1: Prepare the Marinade

  • First things first, we need to make that marinade that will infuse everything with amazing flavor. In a bowl, combine the olive oil, lemon juice, grated onion, minced garlic, brown sugar, Dijon mustard, smoked paprika, Worcestershire sauce, and balsamic reduction. Whisk it all together until it’s well blended. The aroma is intoxicating, something that will get you even more excited about the meal ahead!

Step 2: Marinate the Mushrooms

  • Take those beautiful portobello mushrooms and place them in a shallow dish. Pour the marinade over them, ensuring everything gets coated. Cover with plastic wrap and let them marinate for at least 30 minutes. This step is crucial for developing rich flavors.

Step 3: Sauté the Onions

  • While the mushrooms soak up the goodness, heat that tablespoon of olive oil in a skillet over medium heat. Toss in the red onion slices and sprinkle them with kosher salt.
