Sarah Brown
Let me take you on a culinary journey. Growing up, I was fascinated by the variety of snacks available at fast-food chains. One treat stood out to me: Jack in the Box spring rolls.

Equipment

  • Skillet

Ingredients

  • 1 egg whisked with
  • 1 teaspoon water
  • 12 egg roll wrappers
  • ½ – 1 lb ground pork or chicken or beef
  • 2 cloves garlic finely chopped
  • 2 teaspoons freshly minced ginger
  • ¼ cup tamari or soy sauce
  • 1 teaspoon sea salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon toasted sesame oil
  • 1 16 ounce bag coleslaw mix with cabbage and carrots (use just under the full bag)
  • 4 green onions thinly sliced
  • Oil for frying
  • 1 tablespoon rice vinegar
  • 1 teaspoon crushed red pepper flakes

Instructions

  • Let’s dive into the cooking process step by step.

Step 1: Prepare the Filling

  • In a skillet over medium heat, add your ground pork. Break it apart as it cooks. After about 3-5 minutes, it should be browned. Drain any excess fat. Stir in your garlic and ginger, then add the tamari, salt, sugar, and sesame oil. Mix well and let it simmer for another couple of minutes.

Step 2: Add the Vegetables

  • Now, toss in your coleslaw mix and green onions. Stir constantly. You want the veggies to soften slightly without losing their crunch. This should only take about 2-3 minutes. Once done, remove from heat and let this mixture cool slightly.

Step 3: Assemble the Rolls

  • Lay one egg roll wrapper on a flat surface. Spoon about 2 tablespoons of the filling onto the center. Fold up the bottom corner over the filling, then fold in the sides and roll tightly to secure. Use a little of the egg wash to seal the edges.

Step 4: Fry the Rolls

  • In a deep frying pan, heat about 2 inches of oil to 350°F (175°C). Carefully drop in the rolls, a few at a time, to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown. Once they’re perfect, remove them with a slotted spoon and let them drain on paper towels.

Step 5: Serve

  • Serve these crispy spring rolls hot with your choice of dipping sauce. A sweet and sour sauce will always be the classic option!

Notes

  • Use Cold Ingredients: Cold filling helps keep the wrappers crispy when fried.
  • Don’t Overstuff: Less is more when it comes to filling. Overstuffing leads to leaks during frying.
  • Ensure Proper Sealing: Make sure to seal the edges well to prevent openings while cooking.
  • Adjust Spice Level: If you like it spicy, increase the amount of crushed red pepper flakes.
  • Experiment with Dipping Sauces: Try soy sauce, plum sauce, or spicy mayo for different flavor profiles.
