  • 2 pounds Korean-style short ribs beef chuck flanken, cut ⅓ to ½ inch thick across the bones

  • ¾ cup packed brown sugar

  • 1 large garlic clove minced
  • 1 teaspoon freshly grated ginger
  • 2 scallions thinly sliced
  • 1 tablespoon toasted Asian sesame oil
  • ½ teaspoon crushed red pepper flakes

Step 1: Prepare the Marinade

Whisk the mixture until the sugar dissolves and the ingredients are evenly incorporated. This step ensures that every rib is coated with flavor.

Step 2: Marinate the Ribs

  • Place the short ribs in a resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, but ideally overnight. This time allows the flavors to deeply penetrate the meat.

Step 3: Prepare the Grill
