If you’re anything like me, you love recipes that are quick, comforting, and packed with flavor. So, today I’m thrilled to share one of my all-time favorite dishes: Mongolian ground beef noodles.

Equipment

  • Large skillet

Ingredients
  

  • 12 oz Linguine or substitute with spaghetti or fettuccine for variation
  • 1 lb Ground Beef alternative options include ground turkey, chicken, or pork
  • 4-5 Minced Garlic Cloves
  • 1 tsp Fresh Ginger Paste or 1 teaspoon dried ginger as an alternative
  • 1/4 cup Soy Sauce
  • 1/4 cup Brown Sugar
  • A Pinch of Red Pepper Flakes optional, for a subtle kick
  • 3 tbsp Hoisin Sauce BBQ sauce can be used as a substitute if needed
  • 1/2 tsp Ground Black Pepper
  • 1 tbsp Cornstarch
  • 2 tbsp Cold Water
  • 2-3 Sliced Green Onions optional, for garnish
  • 1-2 tsp Toasted Sesame Seeds optional, for garnish
  • 1 tbsp Rice Vinegar
  • 1/2 cup Shredded Carrots
  • 2 cups Reserved Pasta Water set aside from cooking the linguine

Instructions
 

  • Making this dish is pretty straightforward. We’ll start by preparing the noodles and then work on the delectable beef mixture.

Step 1: Cook the Noodles

  • First, bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Make sure to reserve 2 cups of pasta water before draining.

Step 2: Prepare the Ground Beef

  • While the noodles are cooking, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.

Step 3: Add Aromatics

  • Once the beef is browned, add the minced garlic and fresh ginger paste. Stir for about a minute until fragrant.

Step 4: Mix the Sauce

  • In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, hoisin sauce, and ground black pepper. Pour this mixture into the skillet with the beef, and stir to combine.

Step 5: Thicken the Sauce

  • Mix the cornstarch and cold water together until smooth. Pour this slurry into the skillet, stirring constantly until the sauce thickens.

Step 6: Combine Everything

  • Add the drained noodles to the skillet, along with the shredded carrots. Toss everything together, ensuring the noodles are well-coated with the sauce. If the mixture seems too thick, gradually add the reserved pasta water until you reach the desired consistency.

Step 7: Garnish and Serve

  • Finally, remove the skillet from heat, and garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately and enjoy!

Notes

Here are a few tips to make your Mongolian ground beef noodles absolutely perfect:
  • Don’t Skip the Pasta Water: It helps to adjust the sauce consistency and adds flavor.
  • Use Fresh Ginger: Fresh ginger imparts a more vibrant flavor compared to dried ginger powder.
  • Brown the Beef Completely: Browning the beef fully ensures a richer flavor.
  • Adjust Spice Levels: If you’re not a fan of spice, you can omit the red pepper flakes.
  • Double the Sauce: Love a saucier dish? Make one-and-a-half times the sauce recipe for that extra kick.
