Equipment

  • Large mixing bowl
  • Spatula

Ingredients

  • 1 9- inch 22 cm graham cracker crust
  • 8 ounces 225 g thawed whipped cream topping
  • 2 tablespoons 30 ml fresh lemon juice
  • ½ teaspoon vanilla extract
  • cup 160 ml freshly boiled water
  • 1 cup 250 ml chilled water
  • 3- ounce packet 85 g strawberry-flavored gelatin
  • Optional: Freshly whipped cream and ripe strawberries for garnish

Instructions

Step 1: Mix Gelatin with Boiling Water

  • In a large mixing bowl, dissolve the strawberry gelatin with ⅔ cup (160 ml) of boiling water. Stir until fully dissolved. This usually takes about 2 minutes.

Step 2: Add Chilled Water

  • Slowly add 1 cup (250 ml) of chilled water to the gelatin mixture. Stir well. This will help the gelatin set properly without any lumps.

Step 3: Integrate Lemon Juice and Vanilla

  • Add 2 tablespoons (30 ml) of fresh lemon juice and ½ teaspoon of vanilla extract. These ingredients will elevate the overall flavor profile of your pie.

Step 4: Fold in the Whipped Topping

  • Carefully fold in the thawed whipped cream topping until fully incorporated. Make sure to keep the mixture airy and fluffy.

Step 5: Pour into Crust

  • Pour the mixture into the prepared graham cracker crust. Use a spatula to smooth the top.

Step 6: Chill

  • Refrigerate the pie for at least 4 hours. Overnight chilling is even better for fully set and robust flavors.

Step 7: Garnish (Optional)

  • Before serving, consider garnishing with freshly whipped cream and ripe strawberries. These additional touches not only make the pie look stunning but also add a burst of extra flavor.

Notes

  • Use Fresh Lemon Juice: Freshly squeezed lemon juice offers a much better flavor than bottled alternatives.
  • Thaw Whipped Topping Properly: Make sure your whipped topping is fully thawed. This helps it fold into the mixture better.
  • Chill Overnight: If possible, let the pie chill overnight for best results. This allows the flavors to meld together wonderfully.
  • Pre-Made Crust: Feel free to use a store-bought graham cracker crust to save time.
  • Flavor Variations: Experiment with different gelatin flavors for a twist. Raspberry or peach would be fantastic alternatives.
