  • 1 lb. lean ground beef 454 grams, preferably 90% lean
  • 1 jar creamy nacho cheese sauce this can be found in most grocery stores; look for salsas con queso
  • 1 packet taco seasoning mix or use a homemade spice blend; a mix of chili powder, cumin, garlic powder, onion powder, and paprika works wonderfully
  • 2 tablespoons diced pickled jalapeños these add a tangy heat
  • 1 bag shredded sharp cheddar cheese feel free to indulge here, cheese is life!
  • 16 small flour tortillas about 6-inch/15 cm rounds
  • 1 can refried beans warmed slightly
  • cup water for mixing with the taco seasoning

Instructions
 

Step 1: Prepare the Ingredients

  • Start by prepping all your ingredients. Chop the green onions and set them aside. Warm the refried beans slightly in a microwave or on the stove to make them easy to spread.

Step 2: Cook the Ground Beef

  • In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula. This should take about 5 to 7 minutes. As the beef cooks, drain excess fat if necessary.

Step 3: Add Seasoning

  • Once the beef is browned, sprinkle the taco seasoning on top. Pour in the ⅔ cup of water and stir well. Allow this mix to simmer for a couple of minutes until the beef absorbs the flavors.

Step 4: Assemble the Burrito

  • Now the fun begins! Take a tortilla and spread a couple of tablespoons of warmed refried beans in the center. Top it with a generous scoop of seasoned ground beef, followed by a drizzle of creamy nacho cheese. Sprinkle with shredded cheddar cheese and diced jalapeños.

Step 5: Wrap It Up

  • Fold the sides of the tortilla inward, then roll it away from you, enclosing the filling completely. Aim for a snug wrap, but don’t sweat it if they’re not perfect!
