  • 4 boneless skinless chicken breasts
  • 2 cups self-rising flour
  • 1 tbsp potato starch
  • 2 cups cultured buttermilk
  • 2 tbsp hot pepper sauce
  • 1 tbsp Creole seasoning
  • Canola oil for frying
  • Soft brioche buns
  • Spice Blend:
  • 2 tbsp poultry herb mix
  • 1 tsp smoked paprika
  • 1 tbsp Creole seasoning
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground cayenne pepper
  • 1 tsp black pepper
  • ½ tsp celery salt
  • 1 tsp MSG optional
  • Spicy Mayo:
  • ½ cup Duke’s mayonnaise
  • 2-3 tbsp hot sauce
  • 1 tbsp Creole seasoning
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp ground cayenne pepper
  • 1 tbsp honey

  • Let’s get to the cooking part! Follow these detailed steps:

Step 1: Prepare the Chicken Marinade

  • Start by marinating the chicken. In a bowl, combine cultured buttermilk, hot pepper sauce, and Creole seasoning.
  • Whisk thoroughly. Add the chicken breasts, ensuring each piece is well coated. Cover the bowl and let it sit in the fridge for at least 30 minutes. This marination brings depth to the flavor.

Step 2: Make the Spice Blend

  • While the chicken marinates, let’s work on the spice blend. In a small bowl, mix self-rising flour with the spice blend ingredients. This will create a crunchy coating for the chicken.

Step 3: Heat the Oil

  • In a deep skillet or fryer, add enough canola oil to submerge the chicken. Heat the oil to 350°F (175°C). A thermometer is handy here. Always ensure your oil is at the right temperature for frying.
