Chocolate Sauce:
- 1 1/2 cups Mexican chocolate or a blend of dark and milk chocolate
- 3/4 cup heavy cream
- 1 tablespoon cinnamon
For Frying:
- 8 cups canola oil for deep frying
- Churros:
- 1 cup unbleached all-purpose flour
- 3 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1/4 teaspoon kosher salt
- 3 medium eggs at room temperature
Coating:
- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
- Additional Flavor Enhancer:
- 1/2 teaspoon vanilla extract
Step 1: Prepare the Chocolate Sauce
Start by melting the chocolate for your dipping sauce. Combine the chocolate and heavy cream in a saucepan over low heat. Stir frequently until smooth. Once melted, add a tablespoon of cinnamon, then set aside to cool slightly.
Step 2: Cook the Churro Dough
In a medium saucepan, combine 1 cup of water, 3 tablespoons of butter, 2 tablespoons of sugar, and 1/4 teaspoon of salt. Bring it to a boil. Once boiling, remove it from heat and stir in the flour. Mix until a dough forms.
Step 3: Incorporate the Eggs
Step 5: Pipe the Churros
Scoop the dough into a piping bag fitted with a star tip. Carefully pipe 4 to 6-inch strips of dough directly into the hot oil. Fry in batches, making sure not to overcrowd the pot. Fry until golden brown, roughly 2-3 minutes per side.
Step 6: Coat the Churros
Once properly fried, carefully remove the churros and place them on a paper towel-lined plate to drain excess oil. While they are still warm, roll them in a mixture of 1 cup sugar and 2 teaspoons cinnamon.
Here are some tips for making the best churros:
- Egg Temperature Matters: Make sure your eggs are at room temperature for easier mixing.
- Test the Oil: Drop a small piece of dough into the oil. If it sizzles immediately, you’re ready to fry.
- Avoid Overcrowding: Fry the churros in small batches to ensure even cooking.
- For Extra Flavor: Add a splash of vanilla extract into your dough.
- Dip It Right: Let the chocolate sauce cool slightly before serving; that makes it thick enough to cling to your churros.
